Streaky bacon, avo & brown rice salad with yoghurt & herb dressing


Leftover brown rice gets transformed into a #JustDelicious and simply sup-herb salad!


Streaky bacon

Oil for frying

200g Eskort Rindless Streaky Bacon

Brown rice salad

60ml (¼c) butter

125ml (½c) leeks, chopped

60ml (¼c) vegetable stock

1l (4c) leftover brown rice

Yoghurt and herb dressing

250ml (1c) plain yoghurt

zest and juice of 1 lemon

60ml (¼c) chives, chopped 

60ml (¼c) Italian parsley

1 clove garlic, chopped

salt and pepper to taste

To serve

1 avocado, sliced

handful of rocket


Streaky bacon

  • Put the bacon in a lightly-oiled, cold frying pan, then raise the heat to a moderate setting.
  • Fry the bacon until it’s crispy, then remove it from the pan.

Brown rice salad

  • Add butter to the pan and fry the leeks until they’re glossy then pour in the vegetable stock.
  • Stir in the rice, then remove the pan from the heat.

Yoghurt and herb dressing

  • In a mixing bowl, combine all the ingredients.

To serve

  • Serve a portion of rice topped with rocket, bacon and avo. Add the dressing to taste.
