Watermelon & 5-bean salad with chilli & mint vinaigrette


Bright, flavourful chilli and mint vinaigrette takes this crunchy summer salad from tasty to #JustDelicious!  


Chilli & mint vinaigrette

125ml (½c) mint, chopped

1 green chilli, chopped

60ml (¼c) avocado oil

15ml (1T) red wine vinegar

5ml (1t) black pepper

15ml (1T) castor sugar

Watermelon & 5-bean salad

410g (1 can) butter beans, drained

410g (1 can) red kidney beans, drained

200g green beans

200g sugar snap peas

200g mangetout peas

salt and freshly ground pepper

100g goat’s cheese

1L (4c) watermelon, sliced


Chilli & mint vinaigrette

  • Combine all the ingredients in a small bowl,

  • In a large bowl, combine all the ingredients, apart from the watermelon and goat’s cheese.
  • Pour over the vinaigrette, mix through and season with salt and pepper.
  • Serve the salad with a slice of watermelon and top with goats’ cheese.
