Try this mouth-watering KOO Trifle for the ultimate palate-pleaser, which uses KOO Fruit Cocktail in Syrup but could easily be replaced with KOO Fruit Cocktail Lite or any of your favourite KOO canned fruit.
Serves 8-10 | Preparation: 1 Hour | Chilling: 2 hours
2 packets raspberry jelly
500ml (2 cups) boiling water
1 x 20cm store-bought Madeira loaf
250ml (1 cups) All Gold Smooth Apricot Jam
1 can (825g) KOO Fruit Cocktail in syrup or LITE in fruit juice, drained (save some of the liquid)
500ml (2 cups) cooked custard
500ml (2 cups) fresh cream, whipped
Chopped nuts to decorate
- Make the jelly by dissolving it in the boiling water (follow the instructions on jelly pack), allow to cool and place in the refrigerator until set.
- Cut the Maderia loaf into thick slices. Spread the jam on the slices and place in the bottom of a large glass bowl. Spread the KOO Fruit Cocktail over cake.
- Spoon jelly over the fruit. Pour the custard over the jelly and top with the whipped cream and decorate with the nuts.
- Chill for at least 2 hours before serving.
