Winner, winner chicken dinner


Feast on Creamy Mushroom and Leek Rice with Crispy Chicken Thighs. Try this comforting dish packed with all the goodness of home – here’s how to take your go-to ingredients to the next level. 

Creamy mushroom and leek rice with crispy chicken thighs

Serves 4 | Preparation: 5 Min | Cooking: 35 Min 


375ml (1½) Spekko Parboiled Long Grain Rice

15ml (1T) butter

15ml (1T) oil

1 white onion, finely chopped

2   leeks, finely sliced

4 sprigs fresh thyme, leaves only

15ml (1T) oil

150g shimeji mushrooms (whole) OR baby button mushrooms

250g brown mushrooms, sliced

8 chicken thighs with skins

15ml (1T) oil

salt and pepper to taste

fresh thyme leaves to garnish

Creamy sauce

30ml (2T) butter

30ml (2T) flour

250ml (1c) full-cream milk

60ml (¼c) white cheddar cheese, grated

80ml (1/3c) heavy cream

60ml (¼c) dry white wine



  • Preheat the oven to 180°C and line a baking tray with foil.
  • Cook the rice according to packet instructions.
  • In a pan, heat the butter and oil and sauté the onion, leeks and thyme on a low heat until soft. Remove from the pan and set aside in a bowl.
  • Heat 15ml (1T) oil in the same pan and fry the mushrooms on high heat until golden.
  • Place the chicken thighs on a foil-covered baking tray, cover with 15ml (1T) oil
  • and salt and pepper and bake for 30 minutes until cooked through and crispy.

Creamy sauce

  • In a saucepan, melt the butter over low heat. Add the flour and cook for another 2 minutes. Remove from the heat and whisk in the milk. Return to the heat and cook on a medium heat for 5 minutes.
  • Add the cheese, cream and wine and cook for another 2 minutes. Season with salt and pepper to taste.
  • In a large pan, mix the cooked rice, the onion mixture and creamy sauce together and heat through.
  • Serve the chicken thighs on the creamy rice and garnish with the fresh thyme.
