Zesty spinach & bacon salad


Shredded spinach, #JustDelicious crispy fried bacon cutts and sautéed leeks are mixed with egg yolks and lemon-flavoured olive oil to create a crunchy, zesty salad


200g Eskort Bacon Cutts

250g leeks, thinly sliced

4c Swiss Chard spinach, shredded

3 egg yolks

65ml (¼c) lemon flavoured olive oil


  • Fry the bacon in a pan over a high heat until crispy.
  • Remove from the pan and set aside.
  • Fry the leeks in the bacon fat in the same pan until soft. Remove from the heat.
  • In a large salad bowl, combine the spinach, bacon and leeks with the egg yolks and olive oil. Mix well and serve.
