Boerewors and eggs wraps

Ingredients
  • 6 - small tortillas
  • 60ml - reduced-sugar tomato sauce
  • - pinch of salt
  • 60ml - plain yoghurt
  • 4 - eggs
  • 300g - boerewors, cooked and cut into 6 portions
Method

1 Omelette

Whisk all the ingredients together.

Heat a little oil in a small pan and fry six thin omelettes or fry two regular-size omelettes and cut each into three triangles.

2 Wraps

Put an omelette or triangle on each tortilla, spread a little tomato sauce over and put a piece of boerewors in the middle.

3 To store, tightly wrap each tortilla around the egg and boerewors, then wrap in wax paper or cling film.

Store in the fridge.

4 Remove the wax paper or clingfilm, cut each wrap in half and serve cold.
