Preheat the oven to 180 °C and line a baking sheet with baking paper.
1 Put the flour, caster sugar, yeast, mixed spice, cinnamon and salt in a large bowl and stir to combine. Stir through the cranberries (if using).
2 Heat the butter and milk in a saucepan over medium heat until the butter melts and the milk is lukewarm. Whisk in 1 egg and vanilla. Add to the dry ingredients, using your hand to form a soft dough.
