Pork chops with coriander yellow rice
Pork chops with coriander yellow rice

Cooking Time: 40 minutes
  • 2 - garlic cloves, crushed
  • 15ml - lemon juice
  • - salt
  • 15ml - oil
  • 15ml - butter
  • 60ml - sunflower seeds, toasted
  • 2cm - fresh turmeric, finely grated OR 5ml (1t) dried turmeric
  • - salt and pepper
  • 250ml - chicken stock
  • - onion, chopped
  • 15ml - lemon juice
  • 15ml - olive oil
  • 15ml - butter
  • 4 - pork chops
  • - a bunch of fresh coriander, chopped
  • CHOPS -
  • 375ml - basmati rice
  • 5ml - ground cumin

Rice Heat the butter and oil in a pot and fry the onion, garlic and turmeric until fragrant. Add the rice and stir-fry for 1 minute.

2 Add the stock and simmer until the rice is done and all the liquid has evaporated. Stir occasionally and add more water if necessary. Add the lemon juice and salt.

3 Chops Season the meat with the salt, pepper and cumin. Heat the oil in a pan and fry the chops until browned all over.

4 Add the butter and lemon juice and fry until done. Turn the chops often.

5 Rice sprinkle Mix the ingredients well and sprinkle over the rice and chops.

6 Serve the chops on top of the rice.
