- - fresh coriander
- - pinch of salt
- 3-4 - sweet potatoes, scrubbed and thinly sliced
- - plain yoghurt OR raita
- - ready-made rotis
- 45ml - oil
- 45ml - curry powder
- 750ml - water
- 2 - garlic cloves, chopped
- 1 - cinnamon stick
- 10ml - ground cumin
- 500ml - basmati rice
- 2 - onions, chopped
This is a budget friendly vegetarian meal that’s bursting with flavour.
Preheat the oven to 180°C.
1 Grease an ovenproof dish with a lid with non-stick spray. Keep a sheet of baking paper handy. 1 Heat the oil in a deep pan and fry the onions, garlic and chillies until soft. Add the rest of the spices and stir-fry for another minute.
2 Add the basmati rice and stir-fry for 5 minutes. Add the water and season with the salt. Cover with the lid and simmer slowly for 30 minutes or until the rice is cooked but not mushy.
3 Transfer a third of the rice to the ovenproof dish and arrange a layer of sweet potato slices on top. Add another third of the rice, followed by another layer of sweet potatoes. Add the rest of the rice and cover with baking paper. Firmly close the lid and bake for 40-45 minutes or until the sweet potatoes are soft.
4 To serve: Serve the biryani with the rotis, yoghurt or raita and fresh coriander, and enjoy!
