Allergy Blood Tests

Please could you tell me exactly how they test for

1)gluten intolerance
2)dairy intolerance
3)wheat intolerance
To confirm a actual allergy 100%.
I hear the gluten is complicated and expensive.
4)Can a pin prick allergy test or blood test show the severity to a cat allergy or does it just show allergy?
5)Is there some way to tell if you have Glandular Fever if you have had it before and they can' t detect if its a new or old infection?

There are blood tests you can do to test for food intolerances - it is expensive but not complicated. Finger prick tests won't be able to show you how bad the allergy is - IGE levels may be a better indiction. Glandular fever can be tested with a blood test and you can see if it is a new or old infection by the type of immune globulin that is raised
