When using a can of beans e.g. red kidney beans, is it wasteful of nutrients to drain all the brine first?
I also eat potatoes a lot (like every dinner: mashed/boiled mostly)... is this okay?

In the case of beans canned in brine, it is better to drain off the liquid as it may contain a lot of salt and can also affect the taste of the beans.
Potatoes are relatively healthy, esp if you eat them in their skins as most of the nutrients are found just under the skin, so try baking them too. Because potatoes have a high glycaemic index (GI) you should vary your starches and also include brown rice or pasta made with Durum wheat (check on the label), which have a low-GI for supper variety.
