Wheat and rye are two totally different grains produced from two different plant species. The only significant difference between bread baked with wheat flour and bread baked with pure rye flour is that the rye products have a lower glycaemic index. If you are not allergic to wheat products you can eat both wheat and rye breads, etc, because unsifted wheat products have a high fibre content that prevents constipation despite the higher GI.
