Durum wheat
Hi Doc

Could you please explain the difference between Durum wheat and regular wheat when it comes to Pasta? Why is the prior apparantly so much healthier?

Durum wheat is a specific species of wheat that produces pasta in particular which has a low glycaemic index (GI). It is, therefore, always recommended that individuals with insulin resistance or diabetes should check pasta products to see if they have been made from Durum wheat.
