Don't these preparations that prevent fat from being absorbed also have the same effect on fat soluble vitamins?

Yes, this is one of the side-effects of taking most of the preparations that supposedly 'grab' fat. If you are for example taking Xenical which I regard as the only product that really prevents fat uptake from food, then your dr will prescribe additional fat-soluble vitamins for you to prevent deficiencies.
