why does my one foot go white when I lie on my back and do a hamstring stretch with my legs up the wall? As soon as I stand up my foot goes pink again.

Blood flow to the foot, I assume. Gravity obviously pulls blood down and away from the foot. And then when you stand up the gravity is reversed, and blood returns. The colour change is a result of that shift. It's nothing important. If you did it for a long, long time, your foot might go numb, but it's very temporary and not harfmul at all.
