Maize meal is made up of ground up dried white maize kernels. The ground maize is then sifted to various degrees - unsifted maize meal still contains all the components of the seed like fibre, while highly sifted or refined white maize meal has a low fibre content. It is one of the staple foods of South Africa and other countries in Southern Africa. The dried meal is mixed with water and a bit of salt to cook porridges of various consistencies. Maize meal is rich in starch (carbohydrate), and energy. In SA all maize meal is fortified with vitamins and minerals such as vit A, B vitamins, iron and zinc. In countries like Italy, you can obtain yellow milled maize meal which is called polenta.
