If you skip one meal a day you would be reducing your energy intake which should theoretically cause weight loss, BUT research has shown that people who skip meals tend to overeat at subsequent meals, you unless you can counteract this tendency you won't lose weight. It is better to eat 3 or 6 balanced meals which reduce your energy intake for the entire day and to increase your energy output by doing exercise.
