Is cous cous considered a low GI food. It says on the packet low fat. Is it a good alternative to pasta and bread, just for something different???

Couscous is classified as an intermediate GI food, not high, but also not low. You can lower the GI of couscous by eating it with a salad or lean meat or cooked vegetables. Keep in mind that not all low-fat foods are automatically also low-GI, in fact, the reverse is often the case. Variety in the diet is one of the most important principles of nutrition, so by all means alternate your starches - eat Durum pasta, brown rice, low-GI or rye bread, etc.
