fruit and/or vegetables for 5 a day?
I know its important to have as wide a variety as possible, but is there anything wrong with having a fruit salad for lunch instead of a normal salad to get in the 5+ a day?

You can certainly eat fruit salad to obtain your 5-a-day. Vary the fruits (there are so many delicious and healthy fruits available) and if possible also eat some vegetables each day because the different fruits and vegetables contain different nutrients that all contribute to health.
