I recently read that in the event that salad is eaten at least one "good oil/fat" should be added to allow maximum absorbtion of vitamins and minerals in your body. It is recommended to add a bit of olive oil, avocado, olives or feta and/or any other lean meat. Do you agree?

Yes, it is a good idea to add olive oil or avocado, or olives to a salad as this would improve the uptake of beta-carotene and vit A. Eating moderate amounts of 'good' oils is also beneficial to heart and general health.
