Tomatoes are one of summer’s specialities – flavourful, easy to prepare whether fresh or cooked, and great for a variety of dishes.
1. Tomato and sweet chilli tarte tatin
Serve at room temperature as a side dish with a braaied chop or a piece of ?sh. It will also make a delicious starter when topped with a handful of rocket.
2. Rocket and tomato on toasted bread
Toasted sandwiches remain a favourite. This one, with homemade rocket pesto, is a real hit – and great with cooked pasta. Drizzle olive oil over leftover pesto and store it in the fridge.
3. Tomato, basil and Parmesan risotto
Serve on grilled aubergine slices and garnish with a few rocket leaves.
4. Baked stuffed tomatoes
The tangy tomato flavour, along with the bite of the rocket pesto, will be perfectly offset with a tropical sauvignon blanc.
5. Panzanella with goat’s cheese
This salad is perfect for a sunny day. Serve with a delicious roast chicken and you’re guaranteed a wholesome meal.
