- 1.00kg - baby onions, peeled
- 2.00leaves - bay leaves
- 50.00ml - butter
- 2.00pinch - salt and freshly ground black pepper, to taste

- 60.00ml - castor sugar

1. Preheat the oven. Boil a pot of salted water, add the onions and cook them for about 10 minutes until they have just begun to soften. Drain.

2. Arrange the onions in a single layer in an oven dish. Add the bay leaves, as well as 250ml water. Dot the onions with butter and season with salt and black pepper if necessary (remember that they were cooked in salted water). Bake the onions for 20 minutes and then remove from the oven.
3. Pour the vinegar and sprinkle the sugar over the onions and combine. Return to the oven for another 20-30 minutes or until the onions are golden brown and start to caramelise. Serve.
