- 0.000 - 2 grapefruits
- 60.00g - sugar
- 60.00ml - water

Cut the peel off the grapefruit, scrape
all the bitter pith off the inside of the peel
and cut into slivers. Blanch the peel for 2
minutes in boiling water.
Heat the sugar, water and blanched peel
in a small saucepan without first dissolving
the sugar. Boil until all the water has
evaporated and the peel has been boiled
dry. Remove peel from the pot and place on
baking paper on a baking sheet until dried
and hard.3
