Ingredients
- - TART DOUGH:
- 100g - butter, melted and cooled
- 125ml - castor sugar
- 175g - cake flour
- 60ml - ground almonds
- - PLUM TOPPING:
- 800g - plums, pitted and quartered
- 250ml - castor sugar
- 10ml - corn flour
- 15ml - lemon juice
Method
Enjoy this tart as a lovely light and refreshing dessert.
Preheat the oven and prepare a 24cm spring form tart pan.
Prepare The Tart Dough:
Beat the butter and castor sugar together until light and fluffy. Add the cake flour and a pinch of salt and mix until a soft dough is formed. Press the dough evenly into the tart pan and refrigerate for about 30 minutes. Place the tart pan on a baking sheet and bake for about 15-20 minutes until the dough is golden brown and cooked. Sprinkle the almonds over the dough.
Mix the plum quarters, castor sugar, corn flour and lemon juice in a mixing bowl and pack it on top of the crust. Return to the oven for about 40 minutes until cooked and serve at room temperature with whipped cream.
