Fun fresh fruit in ginger syrup

Ingredients
  • 1 - small watermelon
  • 1 - sweet melon
  • 1 - honeydew melon
  • - fresh mint leaves
  • - SYRUP:
  • 500g - sugar
  • 1l - water
  • - peel of one lemon, cut into strips
  • - peel of one orange, cut into strips
  • - thumb-sized piece of fresh ginger, peeled and grated
Method
The ginger syrup beautifully complements the taste of the fruit.
To Make the syrup
Stir the sugar and water over low heat until the sugar has dissolved. Add the remaining ingredients and bring to the boil, simmering for about an hour until syrupy. Cool and remove the strips of peel.

Use a scoop to create fruit balls or simply cube fruit. Add fruit to the cooled syrup then stir in the mint leaves. Mix well and chill for an hour or two. Serve with Greek yoghurt, whipped cream or ice cream.
