Pear and honey cake

Ingredients
  • 600.00g - pears, cut into wedges
  • 125.00ml - honey
  • 30.00ml - lemon juice
  • 185.00g - butter, soft and at room temperature
  • 160.00ml - brown sugar
  • 3.00 - eggs
  • 375.00ml - cake flour
  • 2.50ml - baking powder
  • 1.00ml - ground cinnamon
  • 1.00ml - nutmeg
  • 80.00ml - milk

Oven temperature: 160°C

1. Preheat the oven. Put the pear wedges, honey and lemon juice into a saucepan and heat over a low heat. Mix carefully until the pear just starts to soften. Drain, but keep the liquid to one side.

2. Cream the butter and sugar until light and fluffy. Add the eggs one by one and beat well after every addition. Sift the cake flour, baking powder and spices and add to the creamed mixture. Lastly, add the milk and beat until everything is mixed.

3. Grease a 23cm flan tin or quiche dish and pour the mixture into it. Arrange the pear wedges on top and bake for 45-50 minutes or until cooked. Remove from the oven and pour the honey and lemon mixture on top. Serve immediately. >>
