Ingredients
- 250.00g - fresh Norwegian salmon fillets (make sure you use the freshest fish)
- 8.00 - salad onions, finely chopped
- 15.00ml - capers, finely chopped
- 30.00ml - gherkins, finely chopped
- 15.00ml - lemon juice
- 30.00ml - Italian parsley, finely chopped
- 30.00ml - thick, quality mayonnaise
- 5.00ml - salt and freshly ground black pepper, to taste
- 100.00ml - créme fraîche and caviar, for garnishing
Method
Fish/Seafood
1. Chop the salmon finely and
mix it with the onions, capers,
gherkins, lemon juice, parsley
and mayonnaise. Season to
taste. Press the mixture into
moulds, such as ramekins
or teacups. Refrigerate until
you want to serve them, or
turn them out on serving
plates immediately.
2. Garnish with créme fraîche and caviar and serve.
