Scrumptious plum cake

Ingredients
  • 250g - butter, at room temperature
  • 250g - castor sugar
  • - grated rind of 1 orange
  • - grated rind of 1 lemon
  • 5 - eggs
  • 210g - cake flour
  • 70g - cornflour
  • 12.5ml - baking powder
  • 10 - plums, halved and pitted
  • 60g - castor sugar
Method
This cake’s equally tasty as a dessert, or served with coffee.
Preheat the oven to 180°C.

Beat the butter, sugar, and orange and lemon rind until light and fluffy. Add the eggs, one by one and beat until combined.
Sift the cake flour, cornflour and baking powder together and add to the mixture. Beat until mixed through.
Spoon the mixture into a greased baking dish or cake tin (30 x 20cm) and arrange the plums, cut side up, on top. Bake for an hour, or until skewer comes out clean. (The plums will drop to the bottom of the cake.)
Sprinkle over castor sugar and serve warm topped with thick cream.
