Ingredients
- 1 - large avo
- - lime juice, salt and pepper to taste
- 30ml - finely chopped red onion
- 30ml - finely chopped herbs such as parsley, coriander, chives or basil
- 1 - chopped (and seeded, if you prefer) chilli
- - 15-30ml Greek yoghurt
Method
This Mexican condiment is delicious served as a dipping sauce on a vegetable platter, with almost anything!
Mash 1 large avo with a fork. Season to taste with lime juice, salt and pepper. Add 30ml finely chopped red onion, 30ml finely chopped herbs such as parsley, coriander, chives or basil, 1 chopped (and seeded, if you prefer) chilli, and finally stir in 15-30ml Greek yoghurt.

Tip
Roast the limes (or lemons as an alternative) on a griddle pan to make sure that you get every last drop of juice out of them.
Makes about 400ml
