• 350g baby carrots
• rind and juice of 1 orange
• 15ml butter
• 15ml honey
• 5ml soy sauce
• 1 thumb-sized piece of ginger, peeled and finely chopped
• salt and freshly ground black pepper
• fresh coriander to garnish
Place the carrots in a saucepan and add the orange rind, juice, butter, honey, soy sauce and ginger. Cover and simmer for about 10 minutes, or until the carrots start to soften but are still crunchy. Remove the lid and allow the liquid to evaporate until it caramelises. Season to taste and garnish with fresh coriander.
