Baked fish with feta, avocado, tomatoes and basil

Preparation time: 10 minutes

Baking time: 15-20 minutes

Oven temperature: 220ºC

  • 4 firm white-fish fillets of about 250g each (use kob, kingklip or yellowtail)
  • salt and freshly ground black pepper, to taste
  • 2 avocados, peeled, pip removed and sliced
  • 250g cherry tomatoes
  • 2 rounds of feta cheese, cubed
  • 250ml thick cream
  • a handful of fresh basil leaves, roughly torn

1. Preheat the oven. Grease an oven dish with butter and arrange the fish fillets inside. Season the fish with salt and freshly ground black pepper.

2. Sprinkle the avocado slices, cherry tomatoes and feta cheese over the fish and, lastly, add the cream. Place the oven dish in the top half of the oven and bake the fish for 15-20 minutes, or until golden brown. Garnish with fresh basil and serve immediately.
