Baked fruit with muesli and yoghurt

  • 100g - butter
  • 2 - large or 4 small fresh apples, sliced
  • 250ml - muesli
  • 15ml - butter
  • 125ml - blueberries or raspberries
  • 1 - small pineapple, peeled and cubed
  • 30ml - lemon juice
  • - yoghurt and honey, to serve
  • 140g (250ml) - cake flour
  • 60ml - sugar
This breakfast dish is like a pudding! I prefer not to peel my apples for a bit of texture but feel free to peel them if so desired.

1 Preheat the oven to 180°C and grease an ovenproof dish with butter. Mix the fruit with the lemon juice and 15ml of the sugar and spoon into the dish in a single layer. Bake for 15 minutes while you make the top layer.

2 Add the remaining sugar to the flour and rub in the butter. Mix this with the muesli. Remove the fruit from the oven and sprinkle the muesli mixture on top. Bake for about 30 minutes or until golden-brown. Serve with yoghurt and honey
