Oven temperature: 180°C
• 1 medium banana loaf (about 500g)
• about 45 ml butter, softened
• 3 extra-large eggs
• 375ml milk
• 125ml cream
• a dash of rum or vanilla essence
• 100g (125 ml) sugar
1 Cut the banana bread into 1cm-thick slices and halve each slice. Spread with a thick layer of butter and arrange in a deep ovenproof dish with the butter side down.
2 Beat the remaining ingredients together and pour over the banana bread. If you have time, let it stand for about 10 minutes so the custard can soak into the banana bread.
3 Preheat the oven. Bake the pudding for 35–40 minutes or until the custard has set.
Remember: the baking time may vary, depending on the size of your baking dish –adeep dish may need longer than a shallow one. Use your judgment when you test the custard and adjust the cooking time.
4 Serve with ice cream. Tip A few banana slices fried in a little caramelised sugar make a yummy topping
