Chicken potjie

We made this chicken dish in a potjie one Saturday, but my mother regularly cooks it on the stove and it really is delicious. I’m proud to share it.

Serves: 6

Preparation time: 10 minutes

Cooking time: 1 hour and 20 minutes

  • 8 to 12 chicken pieces
  • 4 chorizo sausages, chopped
  • 1 onion, chopped
  • 1 green, red and yellow sweet pepper, diced
  • 2 to 3 chillies, finely chopped
  • 4 teaspoons chopped garlic
  • dried mixed herbs to taste
  • 1 litre stock
  • half a bottle of white wine
  • 2 large carrots, chopped
  • 1 cup rice (or more, if desired)
  • salt and freshly ground black pepper to taste

1. Brown the chicken pieces in the potjie in small batches, add the sausages and sauté for 1-2 minutes. Then remove the chicken and chorizo and set aside.

2. Now sauté the onion in the same potjie, then add the sweet peppers and chillies and sauté until translucent before stirring in the garlic and mixed herbs.

3. Return the chicken and sausage to the potjie, pour the stock and white wine over, and cook for 30-40 minutes. Then add the carrots and top that with the rice. Cook for another half hour, until the carrots are soft and the rice is cooked. Season to taste and enjoy!
