
Makes: 4-6 portions
Preparation time: 20 minutes (plus marinating time)
Cooking time: 60 minutes
• 1 pork rib of about 1.5kg
MARINADE
• 2cm ginger, grated
• 3 cloves of garlic, crushed
• 1-2 red chillies, deseeded and finely chopped
• 5ml fine cinnamon
• 5ml five-spice powder
• 125ml honey
• 125ml soya sauce
• 30ml soft brown sugar
• 30ml sesame oil
• juice of 2 lemons
1 Mix the marinade ingredients. Place the ribs in a bowl and pour the marinade over. Set aside in the fridge for a few hours, preferably overnight.
2 Braai the ribs over mild coals for about 45-60 minutes until cooked and soft, brushing marinade over at intervals.
3 Cut in portions between the ribs and brush marinade over.
4 Braai quickly over the coals until crispy all over. Garnish with lemon wedges and serve.
