
Treat your guests with these delicious Florentines.

Preparation time: 25 minutes
Baking time: 5–10 minutes
Oven temperature: 180°C
• 50g butter
• 50g (60ml) castor sugar
• 15ml honey
• 50g (90ml) flour
• 25g candied orange peel
• 50g almond flakes
• 10 glacé cherries, chopped
• 200g milk chocolate, melted
Method
1. Preheat the oven and line two baking trays with baking paper. Melt the butter, sugar and honey together slowly in a pot until the sugar has dissolved. Remove the saucepan from the heat and stir in the flour, orange peel and almonds – this will form a soft ‘dough’. Spoon into a mixing bowl and allow to cool until manageable.
2. Divide the dough into 10 equal portions and press each one down gently onto the prepared baking trays to form the Florentines. Remember to leave space for them to spread. Arrange the cherries evenly over the Florentines. Bake for 5–10 minutes or until crispy with a lovely caramel colour. Allow to cool completely.
3. Brush a thin layer of melted chocolate onto the bottom of the Florentines and use a fork to make patterns in the chocolate.
