French toast with a twist

Fry the sandwiches until golden brown and cooked on both sides.

Serves: 4

Preparation time: 25 minutes

Cooking time: 20 minutes

15ml oil

250g mushrooms, thinly sliced

8 large slices white bread

• hot English mustard

8 thin slices of roast beef or pastrami

500ml cheese, grated

6 eggs

60ml milk

30ml butter and 30ml oil

1. Fry the mushrooms in the oil until golden brown and cooked, then season with salt and pepper. Spread a thin layer of mustard on 4 slices of bread and divide the beef, mushrooms and cheese between them. Close the sandwiches and press together lightly.

2. Beat the eggs and milk, and season with salt and pepper. Pour this into a shallow bowl and dip each sandwich into it very carefully to absorb the mixture. Heat the butter and oil in a pan and fry the sandwiches until golden brown and cooked on both sides.
