Oven temperature: 150°C
- 1 vanilla pod 360 ml (300 g)
- castor sugar
- 3 eggs
- zest of 2 lemons
- 150 ml milk
- 110 g butter, melted
- 100 g ground almonds
- 140 ml cake flour
- 10 ml baking powder
- 4-5 Granny Smith apples, peeled, cored and cut into slices
1 Grease a 23 cm tart dish or springform tin and line the bottom with greased baking paper.
2 Halve the vanilla pod lengthways, remove the seeds and discard the pod. Beat the castor sugar, vanilla seeds and eggs until light and fluffy. Add the lemon zest, milk and butter.
3 Mix the ground almonds, flour and baking powder and stir this into the egg mixture.
4 Pour half the mixture into the tart dish. Arrange half the quantity of apple slices on top and castor sugar on top of this. Pour the remaining mixture over the apple slices, arrange the remaining apple slices on top and sprinkle with more castor sugar. Bake the tart for 45-60 minutes and then leave it to cool.
