
Makes 1 (23 x 23cm) quiche

CRUST
• 150 g savoury biscuits such as Tuc, crumbled
• 100 g butter, melted
FILLING
• 200 g streaky bacon, fried until crispy
• 200 g cheese grillers, cooked
• 100 g salami
• 3 eggs
• 250 ml sour cream
1 Preheat the oven to 180°C. Mix the biscuit crumbs and butter together and press this evenly into a loose-base tart pan. Set aside.
2 Put the bacon, sausages and salami (chop if you want a more even distribution) in the prepared crust. Whisk the eggs and cream together, season with salt and pepper (go easy as the meat is already salty) and pour carefully over the meat. Bake for about 35–40 minutes or until the filling is just set. Allow to cool slightly and serve at room temperature.
