• 8 chicken drumsticks
• 30ml oil
• 2 medium sweet potatoes, sliced
• 3 carrots, cut lengthwise
• 1 onion, cut into wedges
• 5 cloves garlic
• 30ml orange juice
• 60ml honey
• 30ml wholegrain mustard
• 1 orange, sliced
• 2 bay leaves
• 2 sprigs oregano
1. Brown the chicken in the oil until golden and season with salt and pepper.
2. Place the drumsticks, vegetables and garlic in a baking dish. Whisk the orange juice, honey and mustard together and pour over. Arrange the orange slices on top and add the herbs. Cover with foil and bake in a preheated oven at 200°C for 40 minutes or until everything is cooked. You can then place it under the grill to brown if you prefer.
