Ingredients
- 15ml - oil
- 4 - smoked pork rashers, diced
- 2 - leeks, chopped
- 1 - garlic clove, cut into fine strips
- 1 - thumb-sized piece of ginger, chopped
- 1 - red chilli, deseeded and chopped
- 250g - mushrooms, chopped
- 2 - cups cooked rice, cooled
- 4 - jumbo eggs
- 15ml - soy sauce
- 5ml - fish sauce
Method
Drizzle soy and fish sauce over, and serve immediately.
1 Heat a wok or frying pan, add the oil and fry the pork strips for 2-3 minutes until golden brown. Add the leeks, garlic, ginger, chilli and mushrooms, and stir-fry for another 2-3 minutes until the mushrooms are browned.
2 Stir the rice through until combined and heat through. Scrape the stir-fry to the side of the wok then break the eggs into the pan, one by one.
3 Stir-fry until cooked and then stir into the rice mixture.
