
- 5 - x 250ml cake flour
- 10ml - sugar
- 5ml - salt
- 1 - packet of instant yeast (10g)
- 15ml - oil
- - about 325ml lukewarm water
1 Mix the dry ingredients, add the oil to the lukewarm water and mix it all together to form a manageable dough.
2 Knead the dough until smooth and elastic, so it does not stick to your hands.
3 Place the dough in a greased bowl and cover with a clean cloth. Set aside for about 15 minutes in a warm place until it has doubled in size.
4 Knead the dough and roll into balls. Press the balls lightly and sprinkle a little flour over each.
5 Set aside again until it rises to double its size – about 15-20 minutes. Braai over slow coals until cooked and golden.
VARIATION Fry 2 chopped onions in 2 tablespoons olive oil until soft. Add 2 tablespoons brown sugar and stir-fry until caramelised. Add 3 tablespoons balsamic vinegar and simmer. Then allow it to cool completely. Knead the caramelised onion mixture into the dough and add a half a cup of crumbed feta. Serve it with cheese and fig or apricot jam. Then make some more, because your guests will be coming back for seconds!
