Oven temperature: 220°C
• 250 g cooked sweet potatoes, finely mashed or puréed
• about 400 ml lukewarm water
• 750 g cake flour
• 5 ml salt
• 1 packet instant yeast (10 g)
1 Mix the mashed sweet potato with the lukewarm water to form a smooth mixture.
2 Mix the flour, salt and yeast in a bowl, make a well in the centre and pour in the sweet potato mixture. Then mix and knead to an elastic consistency, cover with a cloth and stand in a warm place until the dough has doubled in size.
3 Knead and divide the dough; you can bake it in greased pans, or shape the dough on a baking tray. Cover and stand until it has risen again. Meanwhile, preheat the oven.
4 Sprinkle a little flour over the loaves and bake them for about 15 minutes, then reduce the temperature to 180ºC and bake for another 30 minutes, or until cooked. The bread is ready when it makes a hollow sound when tapped.
