Upside-down tomato and bacon tart

Ingredients
  • 250g - streaky bacon
  • 15ml - oil
  • 1 - large onion, sliced
  • 1 - green pepper, chopped
  • - about 400g mixed tomatoes
  • 1 - sheet puff pastry (250g)
  • - fresh basil or rocket leaves to serve
Method

1 Preheat the oven to 200°C. Fry the bacon until crispy in an oven-proof pan. Remove and fry the onion and pepper until translucent. Add the tomatoes and fry for another minute or two until well mixed. Allow to cool slightly.

Return the bacon to the pan. Roll out the puff pastry and trim the corners to make a circle. Place it over the filling in the pan and bake until golden brown and cooked through (about 30 minutes). Let the tart cool for about 15 minutes before turning it out onto a platter.
