
- 900.00ml - water
- 15.00ml - butter
- 2.50ml - salt
- 250.00ml - polenta
- 45.00ml - Parmesan cheese, grated
- 125.00ml - black olives, pitted and chopped
- 2.00ml - black pepper to taste
1. Place the water, butter and
salt in a large saucepan and
bring to the boil. Use a whisk to
gradually beat the polenta into
the simmering water. Simmer for
20-30 minutes over a low heat
while stirring continuously. The
polenta will start to pull away from
the sides of the saucepan.
2. Stir in the Parmesan cheese
and olives and season with black
pepper. Place the polenta in
a greased ovenproof dish and
bake for about 10 minutes in a
preheated oven. Cut into cubes
and serve with braaied meat
or a stew such as coq au vin.
It is also delicious served with
lamb shanks.
