Ingredients
- 90.00ml - olive oil
- 1.00 - onion, chopped
- 1.00 - celery stick, finely chopped
- 1.00 - carrot, finely chopped
- 2.00cloves - garlic cloves, crushed
- 1.20kg - fresh ripe tomatoes, peeled and chopped
- 100.00g - fresh Italian parsley, chopped
- 10.00ml - salt and freshly ground black pepper, to taste
- 100.00g - fresh basil, roughly shredded
Method

1. Heat the olive oil in a large saucepan.
Add the onion, celery, carrot and garlic and
sauté the vegetables over medium heat until
they are soft. Add the tomatoes and parsley
and season with salt and freshly ground
black pepper. Simmer over a medium heat
for about 20 minutes or until the tomatoes
form a thick sauce.
2. Add the basil at the end of the cooking
time. Allow the sauce to cool slightly and
then purée it in a food processor.
Makes: about 700ml
