Braised cabbage with raisins

Ingredients
  • 30.00ml - butter
  • 2 - onions, chopped
  • 800.00g - cabbage, cut into quarters,stema removed and diced
  • 80.00ml - seedless raisins, soaked in warm Rooibos tea
  • - grated nutmeg, to taste
  • - salt and ground pepper to taste
  • 125.00ml - salted peanuts
Method
Vegetables
Melt the butter in a large saucepan and braise the onion until soft and translucent, but not brown. Add the cabbage and stirfry for 2 to 3 minutes. Add 50ml water and stirfry until the cabbage is tender, but not wilted. Season lightly with nutmeg, salt and pepper. Drain raisins and stir into cabbage. Dish into a warm serving dish and sprinkle peanuts over.
