- 125.00ml - toasted cashew nuts
- 1.00 - garlic clove, crushed
- 750.00ml - broccoli florets, steamed
- 125.00ml - grated
- 100.00g - Parmesan cheese
- 4.00ml - freshly ground black pepper, to taste
- 60.00ml - olive oil
Method
Broccoli
1. Place the nuts and garlic in a food
processor and pulse until fine. Add
the broccoli, Parmesan cheese and
freshly ground black pepper. Add
the olive oil in a thin stream while
the machine runs until the pesto
reaches the desired consistency.
Add more black pepper, olive oil or
salt if necessary.
