Couscous salad with feta, apricots, pecans and strawberries

Ingredients
  • 400g - couscous (prepared according to pack instructions)
  • - 8 to 10 soft dried apricots, sliced
  • 100g - pecan nuts
  • 2 - cloves of garlic, crushed
  • 1 - red chilli, finely chopped
  • - handful Italian parsley, chopped
  • - fresh chives, chopped
  • 125ml - olive oil
  • - juice of two lemons
  • 200g - feta or goat’s milk cheese
  • 200g - strawberries, sliced or diced
Method
For an alternative taste, try replacing the strawberries with pomegranate seeds.

Mix the couscous, apricots and pecan nuts. Prepare a dressing by mixing the garlic, chilli, parsley, chives, olive oil and lemon juice, and add the crumbled cheese to marinate for a while.

Mix the salad dressing and cheese into the couscous and spoon it into a salad bowl. Garnish with strawberries or pomegranate seeds and serve.
