Ingredients
- 400g - couscous (prepared according to pack instructions)
- - 8 to 10 soft dried apricots, sliced
- 100g - pecan nuts
- 2 - cloves of garlic, crushed
- 1 - red chilli, finely chopped
- - handful Italian parsley, chopped
- - fresh chives, chopped
- 125ml - olive oil
- - juice of two lemons
- 200g - feta or goat’s milk cheese
- 200g - strawberries, sliced or diced
Method
For an alternative taste, try replacing the strawberries with pomegranate seeds.
Mix the couscous, apricots and pecan nuts. Prepare a dressing by mixing the garlic, chilli, parsley, chives, olive oil and lemon juice, and add the crumbled cheese to marinate for a while.
Mix the salad dressing and cheese into the couscous and spoon it into a salad bowl. Garnish with strawberries or pomegranate seeds and serve.
