Creamy mealies

  • 30.00ml - butter
  • 1.00 - onion, chopped
  • 30.00ml - flour
  • 5.00ml - mustard powder
  • 5.00ml - salt and freshly ground black pepper, to taste
  • 1.00pinch - pinch of nutmeg
  • 125.00ml - milk
  • 125.00ml - chicken stock
  • 750.00ml - mealie kernels (fresh or frozen)
  • 1.00handful - a handful of parsley, chopped
1. Melt the butter in a saucepan and sauté the onion until soft and shiny. Add the flour, mustard, salt, black pepper and nutmeg and stir until mixed. Add the milk and chicken stock and stir with a wire whisk until smooth. Stir until thickened. Add the mealie kernels and allow to simmer for a few minutes.

2. Add the parsley and serve.
